Ranch Roasted Potatoes



6-8  potatoes, peeled and in 1” cubes
     1 T. ranch dressing mix
  1/4  c. oil

Combine oil and ranch mix.  Place cubed potatoes and oil mix in an air tight container. Toss to coat. Bake 450 degrees for 40-45 min. or until tender and golden brown. . Stir every 15 minutes. This recipe freezes well.

Cream Soup Substitute


2  c. powdered milk
  3/4 c. cornstarch
     2  T. onion flakes
  1/2  t. pepper
     1  t. basil
     1  t. thyme
     2  t. salt

Mix well and store in airtight container.


To make sauce: In a saucepan combine 1/3 cup of mix with 1 ½  cups of chicken or turkey broth. Whisk until smooth. Stir often until thickened. This mixture will thicken as cooling.  Add celery, mushrooms, cheese or other desired ingredients.

Strawberry Vinaigrette






1 pint strawberries 
1⁄2 c. rice wine vinegar
2 T. lemon juice 
1 1⁄2 t. canola oil
2 T.honey 
1⁄4 t.pepper 
1⁄4 t.salt

In a blender, combine strawberries, vinegar, lemon juice, oil, and honey until well blended. Season with salt and pepper to taste.

Dairy-Free Sweetened Condensed Milk



2⁄3 c.sugar
2⁄3 c. canned coconut milk
3 T. butter, ghee, or allergy-free margarine

On low heat, bring coconut milk to a boil. Remove from heat. Combine milk and sugar, in a blender. Add butter and blend well. Scrape down the sides if needed.


This can be refrigerated for up to 3 weeks or frozen for up to 1 year.

*DariFree powdered milk combined with 2/3 c. of boiling water can be used instead of the canned coconut milk.

Dairy-Free Evaporated Milk




1 c. powdered dairy-free milk* 
3⁄4 c. hot water

Combine ingredients in a blender or food processor. 

* DariFree powdered milk works well in this recipe.

Note: In addition to this recipe, canned coconut milk can also be substituted equally for evaporated milk in recipes.

Mock Jell-O



1 c. juice, boiling
1 c. juice, cold
1 T. un
flavored gelatin

Boil 1 cup of juice. Add gelatin to 1 cup of cold juice. Add boiling juice to cold juice. Stir for 2 minutes. Refrigerate until set, 3–4 hours.

This equals 1 small box of Jell-O from the store. Grape juice works well but stains easily. Orange and apple juices don’t work well alone. Try juice combinations such as apple-cherry, apple-cranberry, raspberry, and so on. I have found wonderful combinations from the frozen concentrate section in the grocery store. The Mock Jell-O is faster and healthier than the packaged version you can buy at the store.

Vegetable Beef Soup



2 lbs. beef stew meat (optional) 
3 c. tomato juice
3 c. beef broth
3 c.water

1⁄3 c. chopped onion
2 t.salt
2 t. allergy-free Worcestershire sauce (optional)

1⁄4 t. chili powder
3 tomatoes,diced
2 c. diced potatoes (optional) 

3 c. mixed vegetables

If using meat, brown beef in small amount of oil in large pot. Add vegetable juice, beef broth, water, and onion. Bring to a boil. Mix in remaining ingredients. Season with salt and pepper. Simmer 3–4 hours. This soup can be frozen.

I usually don’t add the meat, tomatoes, or potatoes. A quick way to add potatoes could be using diced frozen potatoes such as Mr. Dell’s or other brands without additives or preservatives. If adding potatoes, salt may need to be increased. This soup is fine to eat after one hour of cooking but is not as thick.
